摘要
主要对肉鸽的营养成分及肉鸽产业的发展进行了概述,对肉鸽的包装加工方法及菜肴加工方法进行了综述,最后提出当代肉鸽的加工将朝着即食食品和休闲小食品加工的方向发展的前景展望。
The nutritional ingredient of pigeon and the development of pigeon industry were intro- duced. The packaging processing method of pigeon and food processing method were summarized. At last the prospect that pigeon processing would develop toward instant food and leisure food was proposed.
