摘要 研究了丙烯酸乙基己酯(EHA)/聚乙烯(PE)复合膜在冷鲜肉保鲜包装中的应用,并与其他包装薄膜进行了对比评估其保鲜保质作用。利用氧气透过率分析仪和水蒸气透过率分析仪测定了EHA/PE复合膜的阻隔性,并将薄膜应用于冷鲜肉的包装上。通过测试被包装冷鲜肉的p H值、汁液流失率和菌落总数等指标来确定冷鲜肉货架期。结果表明,EHA/PE复合膜的氧气与水蒸气的透过率均好于尼龙(PA)、乙烯/乙烯醇共聚物(EVOH)、EHA和尼龙6(PA6)/PE薄膜。EHA/PE复合膜包装的冷鲜肉货架期达到22 d以上,其效果均优于其他薄膜材料。PA6与EVOH共混后得到的EHA薄膜的阻氧性能很高,将EHA再与PE薄膜复合后其阻湿性能也得到了提高,所以EHA/PE复合膜对冷鲜肉具有较好的保鲜效果。 The application of ethylhexyl acrylate (EHA)/polyethylene (PE) composite film in the packaging of chilled meat preservation was researched, which was compared with other packaging films to assess fresh-keeping effects. The barrier property of EHA/PE composite films was determined by oxygen permeability analyzer and water vapor permeability analyzer. Furtherly, the film was applied to the packaging of chilled meat. By testing the pH value, the total number of colonies and other indicators, the shelf life of chilled meat was determined. Results showed that, the oxygen and water vapor transmission of the EHA/PE composite film were better than nylon ( PA), ethylene vinyl alcohol (EVOH) copolymer, EHA and nylon 6 (PA6)/PE films. The shelf life of chilled meat of the EHA/PE composite film packaging was above 22 days, which was better than other films. The EHA film prepared by PA6 blending with EVOH had very high oxygen barrier properties. And when EHA was compounded with PE, the barrier of water vapor was also improved. So EHA/PE composite film had very good effects in terms of chilled meat preservation.
