摘要
卡路里分析仪能快速测定食品中水分、脂肪、蛋白质、碳水化合物、钠、卡路里等指标含量,但是卡路里分析仪在我国的分析应用还很少.本实验以常规物理化学方法和卡路里分析仪方法测定花生仁的水分、脂肪、蛋白质、总糖,比较卡路里分析仪测定值的差异性、准确性,探讨其在食品分析中的可用性.结果表明:卡路里分析仪测定水分、脂肪、总糖的精密度达到仪器分析要求,其准确度通过适度校正能达到分析要求,因此卡路里分析仪测定水分、糖类、脂肪具有可行性,但是对蛋白质的分析测定还需要更多的研究验证.
Calorie Answer can be used to quickly determine some indicators ,such as moisture,lipid,pro-tein,carbohydrates,sodium,calory and so on,but it is rarely used in our country for analytic application . Researching on the precision and accuracy of the Calorie Answer ,we could obtain its availability on food analysis.Peanuts were selected as test samples ,the moisture,fat,protein,total sugar were measured by conventional physical-chemical methods and Calorie Answer ,respectively .we comparied the differences of two methods and determining the standard addition recovery to study the accuracy of the calorie Answer . The results showed Calorie Answer could measure moisture ,fat,total sugar precisely,which met the re-quirements of instrument analysis .Therefore, Calorie Answer is feasible for determining the content of moisture,lipid,total sugar,but the determination of protein analysis still needs more research to verify .
