概述了目前国内酸奶制品常见的质量问题,包括由于原料乳异常引起酸奶发酵异常、酸奶不发酵或发酵过慢、酸奶产品乳清析出、产品组织状态缺陷、味道异常以及由于二次污染造成的异常。综述了国内及国外酸奶质量控制的研究进展。
This article summarizes the common quality problems of the current domestic yogurt products, including abnormal caused by ab- normal raw milk yogurt fermentation, yogurt fermentation, or ferment whey separation, too slow, yogurt products organization state defect, abnormal smell and abnormal caused by secondary pollution. Summarized the domestic and foreign research progress of yogurt quality con- trol.
