摘要
本文是对高油酸葵花籽油的理化性质及化学成分进行分析。结果表明:高油酸葵花籽油酸值、过氧化值、碘值、折光指数(n20)、密度(20℃)、皂化值、不皂化物和110℃氧化诱导期等理化指标分别为:0.05(KOH)/(mg/g)、6.0meq/kg、89g I/100g、1.469、0.915g/cm3、192(KOH)/(mg/g)、8g/kg和13.6h;高油酸葵花籽油主要由油酸、亚油酸、棕榈酸和硬脂酸组成,其含量分别为82.9%、8.4%、3.7%和3.3%。此外还含有丰富的生育酚,其总含量为82.15mg/100g。因此,高油酸葵花籽油具有更好的氧化稳定性和更高的营养价值,是一种具有市场潜力和竞争力的优质食用油。
Physicoehemica] pruperties and chemical composition of high-oleie sunflower oil were investigated. Results in- dicated that acid value, peroxide value, iodine value, refractive index (n20) , density (20℃) , saponification value, un- saponifiable matter and oxidative induction on 110℃ of oil were 0.05 (KOH) /(rag/g), 6.0meq/kg, 89gP100g, 1.469, 0.915g/ cm3, 192 (KOH) /(mg/g) , 8g/kg, 13.6h, respectively. Major fatty acids in oil were oleie acid ( 82.9% ) , linoleic acid (8.4%), palmitie acid (3.7%) and stearie acid (3.3%) .Total contents of tocopherols were 82.15mg/100g. So, high-oleic sun- flower oil had higher nutritional value and better oxidative stability, whieh was a kind of high quality edible oil with market poten- tial and competitiveness.
