摘要
为改善普通食品脂质纳米粒的性能,利用聚乙二醇2000(PEG2000)对脂质载体进行修饰。以白藜芦醇为食品功能因子,探讨了PEG2000修饰条件,制备了PEG2000修饰的白藜芦醇脂质纳米粒,并对纳米粒的微观形貌、纳米分散特性、负载性能、体外释放性能进行表征与测试。当PEG2000与脂质载体比例为1:10时,具有较好的修饰效应,所制备的脂质纳米粒平均粒度在100nm,粒度正态均匀分布,白藜芦醇包封率在80%以上,体外释放符合Higuchi方程。PEG2000修饰白藜芦醇脂质纳米粒,克服了普通食品纳米粒的缺陷,保证了纳米分散特性,提高了纳米粒的负载性能,并具有缓释特征,适合进一步研发为纳米功能食品。
To improve the properties of food lipid nanosphere (FLN), the Polyethylene glycol (PEG2000) is used to modify the carrier of lipid nanosphere. The modification conditions of PEG2000 to the lipid carrier were discussed. The FLN modified by PEG2000 were prepared to load resveratrol, which was afood functional factor. The micromorphology, dispersion characteristics, load properties, release in vitro performance were analyzed and studied. The PEG2000 had modifying effects on the FLN while the mass ratio of PEG2000 and lipid carriers was 1:10. The average particle size was about 100 nm and entrapment efficacy was above 80%. The release in vitro pattern was in accord with Higuchi equation. The resveratrol loaded lipid nanosphere modified by PEG2000 overcame the defects of ordinary FLN, so as to keep the nano-size dispersion, improve loading capability and have a sustained release property of nanosphere. These results indicate that FLN modified by PEG2000 is suitable for development of none-functional food.
