摘要
从堆积发酵糟醅中分离得到1株耐温型产香酵母菌Y3。对Y3株菌进行形态学、生理生化鉴定试验和分子鉴定试验,初步确定Y3为毕赤酵母属kudriavzevii。
One ester - producing yeast Y3 of high temperature resistance was isolated from high temperature accumulation fermenting grains. Y3 was preliminarily identified to be Pichia kudriavzevii strain by morphological observation, physiological and biochemical identification tests and molecular identification test to yeast Y3.
