摘要 脂肪酶(EC3.1.1.3)能够催化多种反应的进行,微生物是脂肪酶的主要来源。对微生物发酵产脂肪酶菌株的筛选、发酵条件、酶的分离纯化及脂肪酶基因工程菌株的构建进行综述。
