利用GC-MS指纹图谱技术快速检测掺伪大豆油的橄榄油 被引量:5

摘要 利用气相色谱-质谱联用技术(GC-MS)建立橄榄油、大豆油和掺入大豆油的橄榄油的GC-MS指纹图谱,并分别匹配特征峰,通过特征峰比时,快速辨识橄榄油与掺伪橄榄油。结果表明:橄榄油指纹图谱匹配了7个共有峰,掺伪橄榄油指纹图谱共匹配了9个共有峰,利用共有峰差异可快速筛选掺伪橄榄油。经过质谱数据库分析,掺伪橄榄油中增加的色谱峰为C_(18:3)不饱和脂肪酸和C_(34:0)饱和脂肪酸。该方法简便、可靠,可用于橄榄油掺伪的快速检测。 Fingerprint of olive oil,soybean oil and olive oil mixed with soybean oil were established by GC-MS. Adulterated olive oil could be quickly identified by comparing characteristic peaks. Results showed that seven characteristic peaks were marked in fingerprint of olive oil, and nine were marked in adulterated olive oil. Significant difference between their fingerprints could be used for rapid screening adulterated olive oil. Additional characteristic peaks in adulterated olive oil were C18:3 unsaturated fatty acid and C24:0 saturated fatty acid by mass spectrum database. This method was convenient and accurate.
