地形对品丽珠葡萄酒挥发性物质的影响 被引量:2

摘要 利用固相微萃取和气相色谱-质谱联用技术,对黄土高原地区不同地形条件下品丽珠葡萄酒的香气成分进行检测分析,结果在平地、低坡和高坡品丽珠葡萄酒中共检测出41种香气成分,主要以醇、酯和脂肪酸类物质为主。所测酒样挥发性成分有13种具有活性,其中8种是3个地形葡萄酒中共有的气味活性成分,11种是2个坡地葡萄酒中共有的气味活性成分,且尤以辛酸乙酯和己酸乙酯的活性值最高,它们赋予酒样花香和水果香气特征。与平地酒相比,2种坡地葡萄酒具有较浓的果香和花香味,且香气特征也更为复杂。地形条件能影响品丽珠葡萄酒的香气组成和含量,但其香气骨架基本一致。
