摘要
高压脉冲电场预处理果蔬可以有效提高果蔬干燥速率,果蔬的力学特性可反映果蔬品质特性,研究高压脉冲电场对果蔬力学特性的影响为干燥速率的预测及干燥过程的在线监控提供了新思路。以白萝卜为研究对象,利用中心组合正交旋转设计确定高压脉冲电场预处理参数,研究了高压脉冲电场对白萝卜屈服极限和弹性模量的影响,建立了预处理参数对弹性模量的回归模型,模型的决定系数为0.88,显著性P值为0.000 1,得出脉冲强度和脉冲个数对弹性模量影响效应显著,显著性P值分别为0.000 1和0.001 7。研究为高压脉冲电场预处理果蔬工艺参数的确定提供了依据。
The pretreatment of fruits and vegetables by high-pulsed electric field can increase the drying rate, the mechanical properties reflect the quality of fruits and vegetables, the study of the influence of high pulsed electric field on the mechanical properties can provide a new idea for the prediction of the drying rate and online monitoring of drying process. White radish was chosen as the subject of experiment, Center orthogonal rotation combination design was used to determine the parameters of high pulsed electric field, the effect of high pulsed electric field on the yield limit and elastic modulus of white radish was studied, established the regression model of elastic modulus, the decision coef- ficient of the model is 0.88, significant P value is 0. 000 1, pulse intensity and pulse number had a remarkable influence on the elastic modulus, significant P values were 0. 000 1 and 0. 001 7, respectively. Study provides the basis for the determination of high-voltage pulsed electric field pretreatment parameters.
