摘要
花生多糖是花生粕中除蛋白质的第二大营养成分,具有免疫调节、保护肝脏、降+血压、抗氧化等生物活性,对其研究和应用可以提高花生的综合利用价值和经济价值。近年来,国内外十分重视多糖类物质的提取、纯化与应用研究。本文对花生多糖的结构、功能及提取纯化工艺进行了总结,对其生物活性在食品医药领域做了讨论,并对目前花生多糖研究中存在的问题及今后的研究进行展望。
The peanut polysaccharides are the second nutritional ingredient in peanut meal except the protein,which have such functions as the immunomodulatory,anti-tumor activity,decrease of blood glucoses,antioxidant activity,could improve the comprehensive utilization value and economic value.Especially in recent years,the peanut polysaccharides extraction,function and application have attracted a large number of attentions all over the world.In this paper,the structure,function,extraction and purification process of peanut polysaccharides were summarized,and the biological activity in the field of food and drug were made discussion,the existing problems in the research of polysaccharide from peanut and its future development tendencies have been summarized and proposed.
