摘要
以大豆(Glycine max)豆粕水解多肽为原料,硫酸亚铁为铁源,比较不同的抗氧化剂对于亚铁离子在溶液中氧化的抑制效果,选择最佳比例的抗氧化剂,通过正交试验优化大豆多肽亚铁螯合物的螯合工艺条件,采用元素分析和红外光谱对合成产物进行表征。结果表明,在抗氧化剂为抗坏血酸,抗坏血酸与亚铁盐的质量比为0.150∶1,多肽与亚铁盐质量比为1∶1,p H 4,反应时间为40 min,反应温度为30℃的条件下,铁螯合率为86.60%,螯合物得率可达46.49%。
Soybean polypeptide and ferrous sulfate were used as raw materials,compared the inhibited effects of different an- tioxidant to the oxidation of Fe^2+ in solution,selected the best antioxidant, the chelating conditions of polypeptide frrous chelate of soybean were optimized by orthogonal test. Polypeptide and Polypeptide frrous chelate of soybean were characterized by elemental and infra-red spectrum analysis. The results showed that the optimal condition was obtained as follows:the an- tioxidant was ascorbic acid,and the mass ratio of ascorbic to ferrite was 0.150:1,the mass ratio of soybean polypeptide to fer- rous sulfate was 1:1 ,pH value was 4,time of reaction was 40 min and temperature was 30 ℃. Under the optimal chelating conditions,the chelated rate of ferrous chelate was 86.60% and the yield of the product could reach 46.49%.
