摘要
近年来,随着社会文明进步和经济形势变化,曾经高速增长的国内餐饮行业发展速度放慢,个别业态甚至出现负增长,高档餐饮陷入困境,举步维艰。在经历了30多年的高速发展后,餐饮行业第一次进入了"寒冬"。面对这一现状,行业内外都在认真思索,积极面对,寻找对策。在众多观点和方法中,回归本原成为一种共识,餐饮业必须认真思考,摒弃发展泡沫,立足自身条件和消费市场,回归大众群体,追求技术品质,遵循饮食伦理真性。
Social advances and economic downturns in recent years are slowing down the pace of catering businesses development. Some businesses have seen negative growth,and so-called high-end restaurants are having a difficult time struggling to survive. The industry has entered a "bitter winter "after thirty years of rapid growth. Efforts to seek corresponding measures are being made both in and outside the catering circles. It’s now widely acknowledged that the catering businesses should return to the fundamentals of its survival by targeting the general public,pursuing skill improvement and observing catering ethics.
