摘要
从中西比照到产自茅尾海域的大蚝,作为肥硕的软体动物,后者的美味尽显出钦州的味道——满城尽飘蚝情味。可是,在这种"味"的背后,含括了怎样的文化底蕴?作者认为主要有:首先,钦州人与大蚝打交道的历史古已有之。其次,钦州人烹调大蚝的菜式不拘一格。在文化意义的层面上,前者呈现久远性;后者体现兼容性。通过这种具有地方特色的"钦州味道"背后所含括的文化底蕴的彰显,一方面让世人充分意识到有助于推动钦州经济发展的、必不可少的海洋人文历史的积淀;另一方面也让世人易于觉察到有助于展示钦州城市形象,铸塑城市精神的容异与开放的胸襟。
By comparison with the Western oysters, Maowei giant oyster, plump and soft, has a superior flavor. That is the taste of the city of Qinzhou. But what is behind the “flavor”, and what cultural content does it contain? The author states two points. First, the people of Qinzhou have a long history dealing with giant oysters. Besides, the people have a unique way of cooking giant oysters. From the cultural perspective, the former indicates permanency while the latter, compatibility. By highlighting the culture behind the local “Taste of Qinzhou”, people are fully aware that its essential marine human history helps to speed up the economic development of Qinzhou. On the other hand, people come to notice that its diversity and openness lead to promote the image of Qinzhou and to shape the city spirits.
