摘要 对燕麦油脂的抗氧化能力做了研究。以石油醚、正己烷、异丙醇、乙酸乙酯和乙醇5种溶剂分别提取燕麦油,粗油的酸价(6.90~9.22)和过氧化物(K_(232):2.61~2.72,K_(270):1.05~1.1)均很高。将0.2%和2%的油脂稀释液与0.02%的VC、特丁基对苯二酚(TBHQ)和水溶性VE(Trolox)进行抗氧化能力比较,发现燕麦油的DPPH·自由基清除能力低于几种典型抗氧化剂,但2%燕麦油的还原力(0.25~0.27)显著高于这几种抗氧化剂(0.036~0.061),对于ABTS^+·清除能力而言,2%的燕麦油的清除能力和3种抗氧化剂接近(约为90%)。以燕麦油为油相的乳液仍然保持着较高的DPPH·自由基清除能力(石油醚、正己烷、异丙醇、乙酸乙酯、乙醇分别为73.21%、76.32%、75.42%、85.61%、89.24%)。燕麦中的极性物质有着较高的抗氧化能力(DPPH·自由基清除率:6.39%~83.22%;还原力:0.07~0.63;ABTS^+·清除率:79.31%~97.53%)。 For the further development and utilization of oat, antioxidant ability of oats was studied. Oat oil was extracted by petroleum ether, hexane, isopropanol, ethyl acetate and ethanol separately. The acid values (6.9 - 9.22) and peroxides ( K232:2.61 - 2.72 ; K270 : 1.05 ~ 1. 1 ) of crude oat oil were high. Comparing DPPH · radical scavenging assay of O. 2%, 2% oil diluents and 0. 02% diluents of three typical antioxidants(ascorbic acid (VC), tertiary butyl hydroquinone (TBHQ), water- soluble vitamin- E (Trolox), it was found that DPPH ~ radical scavenging activity of oil solutions was lower than those of several antioxidants, but reducing power of 2% oat oil solutions( 0.25 -0. 27 ) was higher than those of several antioxidants (0.036 ~ 0.061 ). As for ABTS + scavenging activity, there were minor differences between 2% oat oil and the three antioxidants( about 90% ). The emulsion which contained oat oil as oil phase had high DPPH · radical scavenging activity (petroleum ether:73.21% ; n -hexane:76.32% ; isopropanol: 75.42% ; ethyl acetate :85.61% ; ethanol :89.24% ). In addition, the polar contents of oat oil had a good antioxi- dant activity ( DPPH · radical scavenging activity : 6.39 - 83.22% ; reducing power: 0.07 - 0.63 ; ABTS + · radical scavenging activity : 79.31 - 97.53 % ).
