摘要
[目的]研究高活性大豆异黄酮发酵豆粕(HSMF)的体外抗氧化能力。[方法]选取HSMF、普通发酵豆粕(SMF)和普通豆粕(SM)三种材料,分别制备不同浓度发酵豆粕的大豆异黄酮(SIF)提取液,测定其体外抗氧化能力及苷元转化效率。[结果]发现1,1-二苯基-2-苦肼基(DPPH)清除力和还原力与SIF浓度呈正相关,羟基自由基清除力和超氧阴离子清除力随着浓度的升高而升高,达到一定浓度后保持稳定。当在浓度为100%时,HSMF、SMF、SM的DPPH清除力分别为58.56%、45.32%和31.01%,还原力分别为1.04、0.80和0.44,羟基自由基清除力分别为78.56%、70.54%和65.42%,超氧阴离子清除率分别为61.59%、49.21%和17.53%,苷元型异黄酮所占比例分别为18.84%、50.90%和85.62%。[结论]利用复合益生菌发酵后的豆粕抗氧化能力显著高于SMF及SM(P<0.05)。
[Objective]To study the antioxidant ability of soybean meal fermented(SMF) with high reactive soybean isoflavones(SIF) in vitro.[Methods]Prepared three kinds of SIF extract,test antioxidant ability in vitro and test the biotransformation efficacy of SIF.[Results]The results showed that the DPPH free radical scavenging capability and reducing power increased depending on the samples concentration.Hydroxyl radical and superoxide anion scavenging capability first increased with the sample concentration and then remained stable.When the sample concentration was 100%,the DPPH free radical scavenging capability of HSMF,common SMF and raw SM was58.56%,45.32% and 31.01%.Reducing power was 1.04,0.80 and 0.44.Hydroxyl radical was 78.56%,70.54% and 65.42%.The ratio of aglycone in total SIF was 18.84%,50.90% and 85.62%,respectively.[Conclusion]The antioxidant capacity of HSMF was greater than the common SMF(P 〈0.05) which is greater than raw SM(P 〈0.05).
