摘要
目的了解武威市某城区餐饮业餐饮具卫生状况。方法采用大肠菌群快速检验纸片法,对甘肃省武威市某城区2012-2013年餐饮单位餐饮具消毒效果进行检测与分析。结果两年共检测该城区餐饮具7 288份,平均合格率为55.7%。市区餐饮店餐饮具消毒质量合格率平均为63.6%,乡镇餐饮单位餐饮具消毒质量合格率平均为44.7%。大中型酒店、普通餐馆和学校幼儿园餐厅等部位餐饮具消毒质量合格率依次为88.7%、55.8%和58.4%。一年四季中,以夏季各餐饮单位餐饮具消毒质量合格率最低。结论所调查的城区餐饮业的餐饮具卫生状况不容乐观,餐饮具消毒质量有待于提高。
Objective To understand tableware hygiene of restaurant in Wuwei city,in order to improve the quality of tableware disinfection. Methods Fecal coliform rapid test paper method was used to test and analyze the disinfection effect of tableware catering unit in Wuwei, gansu province from 2012 to 2013. Results 7 288 pieces of tableware were detected in two years. The average pass rate was 55.7%. The average qualified rate of tableware disinfection quality in downtown restaurants was 63.6%, and 44.7% in town. The quality qualified rate of large and medium - sized hotel restaurants and ordinary kindergarten school dining hall was 88.7% 55.8% and 58.4% respectively. In summer the tableware disinfection quality qualified rate was the lowest. Conclusion The health situation of city restaurant tableware is not optimistic. Tableware disinfection quality needs to be improved.
