鸡蛋的生物活性成分及其综合利用

摘要 鸡蛋中的一些生物活性成分具有抗菌、抗病毒、免疫调节和抗癌活性,已有研究者从鸡蛋中提取各种有效生物活性成分,将其应用于各种病症的预防和治疗。目前,在工业上已开始对部分鸡蛋活性成分进行提取利用,发达国家蛋制品技术和设备已达到较高水平。本文综述了鸡蛋的生物活性成分及国内外鸡蛋的综合利用情况。以期望拓宽对卵白、卵黄、蛋壳的综合开发思路,从而获得更高的经济效益、社会效益和生态效益。
