8种水果酚类化合物含量与其抗糖基化作用的研究 被引量:4

摘要 主要介绍了8种常见水果的多酚含量及其对糖基化终产物(AGEs)的抑制作用。通过Folin-酚法和荧光分光光度法测定了多酚含量和抗糖基化作用。结果显示桑葚总酚含量为最高,山楂中为最低;桑葚具有最高的抗糖基化活性,山楂为最低。摄入丰富多酚化合物含量的水果,结论显示食物中多酚含量越高,其抗糖基化水平越高,对于AGEs形成以及可能引起的糖尿病血管并发症、粥样硬化、衰老过程能起到一定的积极预防作用。 The content of polyphenol and its inhibiting effect on AGEs in 8 species of common fruits were analyzed. The content of polyphenol and the effect of anti - glycation were determined by Folin - Ciocalteu phenol method and fluorescence spectrofluorometer method. Results show that the content of polyphenol is the highest in mulberry while the lowest in hawthorn. Mulberry has the highest activity of antiglycation, while the hawthorn is the lowest. The fruits intaking the content of various polyphenol compounds show that the higher the content of polyphenol in food, the higher the level of its antiglycation, it can contribute to prevent AGEs formation, which may cause diabetic complication, artherosclerosis and aging.
