摘要
本文研究了六偏磷酸钠、三聚磷酸钠、EDTA-2Na、D-异抗坏血酸钠、植酸对使用胭脂红、苋菜红、诱惑红为着色剂的红西柚浓缩饮料的护色效果。通过单因素试验和正交试验的结果表明:单一护色剂中,除了D-异抗坏血酸钠外,其他护色剂效果明显。复配护色剂中,六偏磷酸钠添加0.01%,EDTA-2Na添加0.05%,植酸添加0.015%,三聚磷酸钠添加0.1%。对胭脂红为着色剂的饮料护色效果明显;六偏磷酸钠添加0.01%、EDTA-2Na添加0.07%、植酸添加0.01%、三聚磷酸钠添加0.15%,对苋菜红为着色剂的饮料护色效果明显;六偏磷酸钠添加0.015%、EDTA-2Na添加0.07%、植酸添加0.015%、三聚磷酸钠添加0.15%,对诱惑红为着色剂的饮料护色效果明显。
The color - protection effect of sodium hexametaphosphate, EDTA - 2Na, D- sodium erythorbate, phytic acid and sodium tripolyphosphate to the red grapefruit concentrate beverage that used of carmine colorant, amaranth colorant and allura red colorant was studied. The results show that, among the abovementioned single colorants, except for Dsodium erythorbate, all others have a clear color protection effect to the beverage in a single factor experiment or an orthogonal experiment. The colour fixative modulated with 0.01% of sodium hexameta phos- phate, 0.05% of EDTA- 2Na, 0. 015% of phytic acid and 0.1% of sodium tripolyphosphate has a clear colorpreteetion effect to the beverage that used of ponceau 4R colorant. The color fixative modulated with 0.01% of sodium hexameta phosphate, 0.07% of EDTA - 2Na, 0.01% of phytic acid and 0.15% of sodium tripolyphosphate has a clear colorpretection effect to the beverage that used of amaranth colorant. The colour fixative modulated with 0. 015% of sodium hexameta phosphate, 0. 07% of EDTA - 2Na, 0. 015% of phytic acid and 0. 15% of sodium tripolyphosphate has a clear color - pretection effect to the beverage that used of allura red colorant.
