摘要
在肉制品加工过程中,常会加入适量的亚硝酸盐作为发色剂、抗氧化剂及防腐剂,但是亚硝酸盐超标会对人体健康产生一系列危害。通过综述近年来肉制品中亚硝酸盐的国内外检测方法,阐述亚硝酸盐含量检测在食品安全检测中的重要性。
In meat products processing the right amount of nitrite could beaddedas colour former, antioxidants and preserva- tives. However, excessive nitrite will produce a series of hazards to human health. Therefore, the detection of nitrite content has become an important item in food safety testing. In this article detection methods of nitrite in meat products at home and abroad in recent years are reviewed.
