摘要
菠萝蛋白酶属于巯基蛋白酶,是存在于菠萝茎和果实中的一类蛋白水解酶的总称。文章就菠萝蛋白酶的理化特性、提取工艺及其在医疗和食品行业的应用作一简述。
Bromelain is a sulfhydryl peotease from the stem and fruit of pineaoole. This paper summarized the physicochemical property, extraction technology of the bromelain and its application in medication and food industry.
