山楂简易MA贮藏活性氧代谢的研究

摘要 为了提供果蔬保鲜的一种新途径,以山楂为材料,采取保鲜袋小包装(简易MA贮藏)和敞口的形式,在冷藏库内进行山楂贮藏对比试验,测定山楂组织内抗坏血酸过氧化物酶(APX)、苯丙氨酸解氨酶(PAL)、过氧化物酶(POD)、过氧化氢酶(CAT)、多酚氧化酶(PPO)的活性以及总酚的含量。结果表明:简易MA贮藏可以有效抑制APX活性下降,降低PAL、POD和PPO的活性,推迟CAT活性高峰出现时间,还可以维持较低的总酚含量,防止山楂腐烂,延长贮藏期。 In order to provide a new preservation way of fresh fruits and vegetables, taking hawthorn as the materials, taking storage bags small packing (simple MA storage) and the form of storage in cold storage for hawthorn. Ascorbate peroxidase (APX), phenylalanine ammonia-lyase (PAL), peroxidase (POD), peroxide catalase (CAT) ,polyphenol oxidize (PPO) activity and total phenol content of hawthorn organization were measured and compared. The results showed that simple MA storage could inhibit APX activity decline, reduce PAL, POD and PPO activity,delay CAT time of peak activity,but also maintain a lower total phenol content, prevent hawthorn decay and extend the storage period.
