贵州白山羊的屠宰与肉质性状及脏器系数测定 被引量:6

摘要 为探明贵州白山羊的种质特性及其生长发育规律,对42只贵州白山羊进行屠宰性状、肉质性状及脏器发育程度测定,并对屠宰性状、肉质性状进行相关性分析。结果表明:成年羯羊的屠宰性状指标多数高于成年母羊,成年羊屠宰性状多数指标间呈显著或极显著相关;周岁羊的屠宰性状指标普遍低于成年羊,周岁羊屠宰性状部分指标间呈显著或极显著相关。成年贵州白山母羊与羯羊的肉质性状指标间无显著差异;周岁贵州白山羊公羊的肌肉失水率(36.07%)显著高于周岁母羊,其余指标间无显著差异。成年羊的脏器重比周岁羊高约1倍,周岁羊的脏器系数与成羊间无显著差异。 The slaughter trait, meat quality and viscera development of 42 Guizhou White Goats were determined and then the correlations between slaughter traits and between characters of meat quality were analyzed to probe germplasm characteristics and growth regularity of Guizhou White Goat. The results showed that most slaughter indexes of adult wethers are higher than adult female goats and there are significant or very significant correlations between most slaughter indexes of adult goats. The slaughter indexes of yearling goats are lower than adult goats generally and there are significant or very significant correlations between part slaughter indexes of yearling goats. There are no significant differences between meat quality indexes of adult Guizhou White Female goat and wethers. The rate (36. 07%) of muscle water loss of yearling Guizhou White male Goat is significantly higher than yearling Guizhou White female Goat and there are no significant differences in other indexes between yearling Guizhou White male Goat and yearling Guizhou White Female Goat. The viscera weight of adult goat is nearly twice as yearling goat and there are no significant difference in viscera coefficients between yearling goat and adult goat.
