摘要
以黑豆和决明子为主要原料,研究了黑度决明子无糖复合饮料的生产配方,通过排序检验法对黑豆乳和决明子浸提液的比例进行了试验;采用感官评价和正交试验确定了复合饮料的最优配方;结果表明,黑豆决明子复合饮料的最佳配方为,黑豆乳与决明子浸提液混合液(黑豆乳与决明子浸提液体积比为2︰3)为70%,复合乳化稳定剂(CMC-Na 0.15%,黄原胶0.05%,单甘酯0.05%,蔗糖酯0.15%)为0.40%,木糖醇为3%,阿斯巴甜为0.010%。该饮料口感好,富含蛋白质,具有一定的保健作用。
Using black soybean and semen cassiae as the main material, the volume ratio between black soybean milk and semen cassiae extract was studied. Through orthogonal experiment, the optimum conditions were obtained as followings: the black soybean milk and semen cassiae extract (of which the ratio of black soybean milk and semen cassiae extract was 2 : 3) was 70%, the mixed emulsifiers stabilizers (of which CMC-Na was 0.15%, xanthan gum was 0.05%, monoglyceride was 0.05% and sucrose ester was 0.15%) was 0.40%, xylitol was 3% and aspartame 0.010%. The compound beverage has a variety of health functions, which is suitable for all types of people to drink.
