摘要
主要研究了酵母抽提物在土耳其风味香肠中增鲜增味效果,通过与传统鲜味剂味精在鲜味和口感方面进行了比较分析,结果表明:酵母抽提物(LA00、KU012)在鲜味和口感方面优于味精。
The effect of enhancing umami studied. It was compared with traditional flavor showed that yeast extract (LA00, KU012) was and flavor of yeast extract on Turkey flavor sausage was enhancer MSG in terms of umami and taste. The results superior in aspects of umami and taste than MSG.
