空调控温储粮对稻谷脂肪酸值变化的影响 被引量:10

摘要 针对我国南方因气候高温高湿,粮食储藏难度大的难题,在高大平房仓采用空调进行控温储粮研究,并分析稻谷上、中、下各层脂肪酸值的变化。结果表明,稻谷脂肪酸值从高到低依次为表层、中上层、中下层和底层,其中表层稻谷脂肪酸值变化幅度最大,而中上层、中下层和底层稻谷的脂肪酸值均低于25.5 mg KOH/100 g,空调控温储粮对延缓表层稻谷脂肪酸值升高具有显著作用,并对改善整仓粮食品质具有一定的作用。 For that the paddy was difficult to store in high temperature and moisture areas,quasi-low temperature storage by airconditioning was used in larger warehouse in south of China.The change of fatty acid value for the paddy was studied.The results show that,the sequence of the paddy fatty acid value from high to low was the surface,the middle-upper layer,the middle-lower,and the bottom.The change range of fatty acid values for the surface paddy got biggest.The values for other was less 25.5mg KOH/100 g.It had significant role in delaying to increasing the fatty acid value of the surface paddy by air-conditioning.
