摘要
从煎饼的发展简史、民俗文化特征中,可分析其"摊煎饼"这一别称所蕴含的文化心理现象。在临沂,根据成品煎饼的特征、制作方式、受热方式,"摊煎饼"存在着塌煎饼、搨煎饼、煎饼三种读音相同但字体不同的名称,体现了食物名称中所蕴含的地域性与民俗性。
Culture and psychology phenomenon contained in "Tan jian bing", which is another name for pancakes, can be analyzed on the basis of pancakes" brief development history and folk culture characteris- tics. In Linyi, based on the characteristies , production way and heating way of the ready-made pancakes,"Tan jian bing" has three names, which are"塌煎饼","搨煎饼""(火日羽)煎饼"with same pronunciation but different fonts, embodying the regionalism and folk customs on the part of food names.
