湖南地区种植的紫淮山主要营养成分分析 被引量:11

摘要 对湖南邵阳和株洲两地种植的紫淮山主要营养成分进行了分析。结果表明,湖南邵阳和株洲两地种植的紫淮山块茎营养成分丰富,其中蛋白质含量较高,分别达到9.99%和15.91%;氨基酸种类齐全,总氨基酸含量分别为62.54和101.05 g/kg;Fe、Zn、Mn、Se等微量元素含量丰富,邵阳紫淮山达到20.81、16.04、7.14 mg/kg和26.40μg/kg;株洲紫淮山达到27.65、19.19、2.03 mg/kg和19.70μg/kg。研究结果还表明生产地对紫淮山品质特征影响较大,湖南地区适合种植紫淮山。 This study was conducted to analyze the nutritional components of the purple yam planted in Shaoyang and Zhuzhou, Hunan.The results show that the nutritional components of the two regions' purple yam were rich, especially its protein content was higher, and Shaoyang's purple yam protein content was 9.99% and Zhuzhou's was 15.91%. The two areas' purple yam was rich in amino acids and its amino acid contents were 62.54 g/kg and 101.05 g/kg, respectively. Its microelement content was rich, such as Fe, Zn, Mn and Se, they were 20.81 mg/kg, 16.04 mg/kg, 7.14 mg/kg and 26.40 mg/kg in Shaoyang's purple yam, and 27.65 mg/kg, 19.19 mg/kg, 2.03 mg/kg and19.70 mg/kg in Zhuzhou's purple yam, respectively. And the producing area is of more effect on the quality of purple yam, and Hunan is suitable for purple yam growth.
