摘要
以豫南的南阳、信阳、驻马店3个市下辖的30个市、县为研究对象,采用资料收集法、观察法、区域调查法,结合该区的自然环境、人文环境、历史文化底蕴,从地域差异、地方特色、文化传统、特色饮食等角度,对豫南饮食特征进行了系统分析,把豫南地区的特色饮食划分为秦巴风味区、川渝风味区、清真风味区、中原风味区、信阳菜区、徽菜风味区6个特色饮食区,分析了其形成原因,最后总结出豫南地区传统饮食地图和饮食特色,为挖掘、保护豫南传统文化和旅游资源的开发以及该区的传统饮食文化的发扬光大提供参考资料。
The paper conducts a systematic analysis of the dietary features of thirty counties or county-level cit- ies under the jurisdiction of Nanyang,Xinyang and Zhumadian in the south of Henan Province in terms of their natural environment, social settings, history, geological differences, regional specialties, cultural traditions and featured foods, adopting such research methods as literary reviews, observation and regional surveys, etc. The Southern Henan Province is then classified into six zones based on the flavors of their respective diets, namely, Qinba Flavors, Chuanyu Flavor, Muslim Flavor, Mid-land Flavor, Xinyang Flavor and Anhui Flavor. The paper continues with the causes for their formation before finally mapping the traditional diets of Southern Henan, in the hope to provide reference for the exploration, conservation and development of its traditional culture, tourism resources and diets.
