摘要
目的了解抚顺市顺城区饭店食(饮)具消毒效果,针对问题提出相应对策,为监督监测、预防食物中毒工作提供依据。方法 2014年6~10月对抚顺市顺城区20家大型饭店和124家小型饭店按规模大小随机抽取碗、盘3 080份样品,采用大肠菌群快速检测纸片进行消毒效果检测。结果大中型饭店总消毒合格率为54.66%,小型饭店总消毒合格率为43.75%(P〈0.01)。大中型饭店不同月份消毒合格率差异有统计学意义(P〈0.01),6月份最高、9月份最低,小型饭店不同月份消毒合格率差异有统计学意义(P〈0.01),6月份最高、8月份最低。碗的总消毒合格率为50.90%,盘的总消毒合格率为40.84%(P〈0.01)。结论顺城区食(饮)具消毒合格率较低,存在二次污染情况。
Objective To understand the disinfection status of tableware in restaurants of Shuncheng district,Fushun cit- y,put forward the corresponding countermeasures against those problems, so as to provide basis for supervision and moni- toring,prevention of food poisoning. Methods The tableware of 20 large hotels and 124 small hotels were selected ran- domly according to the size inShuncheng district,Fushun city during June-October, 2014, for analyzing the tableware disin- fection effect using the rapid detection of fecal coliform scraps of paper. Results The total qualified rate of disinfection was 54.66% in large and medium-sized hotels, and 43.75% in the small restaurants( P 〈0.01). There was significant difference in the qualified rate among large and medium-sized restaurants between different months, the highest in June, and the lowest in September ( P 〈 0.01), there was significant difference among small restaurants between different months,the highest inJune,and the lowest in August( P 〈0.01). The total qualified rate of disinfection was 50.90% in bowls,and 40.84% in plates( P 〈0.01). Conclusion The qualified rate of tableware disinfection is low in Shuncheng district, Fushun city, with secondary pollution.
