大豆、食用豆、玉米和小麦籽粒中植酸和酸溶性总磷的分析研究 被引量:1

Analysis and Study of Phytic Acid and Total Acid Soluble Phosphorus in Soyban,Food Legumes,Corn and Wheat

摘要 作者分析了大豆、食用豆、玉米和小麦籽粒中植酸、酸溶性磷及蛋白质含量。结果表明大豆中植酸含量最高(16.48—18.87mg/g),玉米最低(8.33—9.19mg/g)。大豆及小麦的植酸—蛋白质相关系数为0.474及0.768,两者分别存在着显著及极显著的相关关系。大豆、食用豆和玉米中植酸—酸溶性磷之间呈线性相关(相关系数分别为0.985、0.925和0.993). Seeds of soybean,food legumes,corn and wheat were analysed for p- hytic acid,acid-soluble phosphorus and protein contents.The result sho- wed that phytic acid levels in soybeans were the highest(16.48-18.23 mg/ g),that of corn the lowest(8.38-9.19mg/g).The correlation coefficien- ts between phytic acid and protein in soybean and wheat were 0.474 and 0.618;and the correlations were significant and highly significant,res- pectively.Linear relations were established between phytic acid and aci- d-soluble phosphorus in soybean,food legumes and corn(r=0.985,0.925 and 0.993,respectively).
