摘要
以马铃薯淀粉为原料,3-氯-2-羟丙基-三甲基氯化铵(CTA)和2,3-环氧丙基三甲基氯化铵(GTA)作为醚化剂,采用双醚化剂微波半干法制备马铃薯阳离子淀粉。应用混料设计法和响应曲面法对工艺过程进行优化,最终确定微波半干法制备马铃薯阳离子淀粉最优工艺条件为:CTA添加量5.24%,Na OH添加量1.8%,GTA添加量6.36%,微波功率476 W,反应温度71.8℃,反应时间10.36 min,体系含水率18.2%。在最优的工艺条件下,制备的马铃薯阳离子淀粉取代度为0.178,反应效率高达93.89%。
Using potato starch as raw materials, 3-chloro-2-hydroxypropyl trimethyl ammonium chloride (CTA) and 2, 3-epoxy propyl trimethyl anunonium chloride (GTA) as etherifying agent, the preparation technology of potato cationic starch by using double etherifying agent microwave half dry method was researched. Based on mixture design method and response surface method, the optimal preparation technological parameters were as follows: adding 5.24% CTA, 1.8% NaOH, 6.36% GTA, microwave power 476 W, reaction temperature 71.8 ℃, reaction time 10.36 min and moisture content of system 18.2%. Under the optimal technological condition, DS was 0.178 and RE was 93.89% for potato cationic starch.
