摘要
在高温条件下,用正己烷作为溶剂从玉米皮中提取出玉米皮油.通过分光光度法、气相色谱等技术对萃取的玉米皮油的理化指标、玉米皮油脂肪酸组成及植物甾醇含量进行分析测定.研究表明,玉米皮粗脂肪含量为2.62%,粗纤维含量为16.20%;玉米皮油的皂化值为162.50 mg KOH/g,过氧化值80.50 mmol/kg,酸价14.80 mg KOH/g,碘值111.75 g I2/100g;玉米皮油的不饱和脂肪酸含量接近80%,其中50%以上为亚油酸;玉米皮油中含有丰富的植物甾醇,含量为6.42%.可见,玉米皮油可以作为一种食品保健油,具有重要的开发、研究利用价值.
The oil is extracted from corn bran with n-hexane as a solvent under high temperature. The physical and chemical indicators, fatty acid composition and the content of phytosterols of the extracted corn bran oil were analyzed by spectrophotometry, gas chromatography and liquid chromatography techniques. The results showed that corn fiber contains 2.62% crude fat and 16.20% crude fiber; physicochemical characteristics of corn fiber oil were saponification value 162.50mgKOH/g, peroxide value 80.50mmol/ kg, acid value 14.80mgKOH/g, and iodine value 111.75gI2/100g; unsaturated fatty acids in corn fiber oil is about 80%, including over 50% of linoleic acid ; Phytosterols is rich in corn fiber oil which contains 6.42%. It shows that corn bran oil can be used as a health food oil and has an important development, research application value.
