摘要
以苦葫芦为主要原料研制具有辅助降血糖功能的功能性饮料,对其加工工艺进行优化研究。通过正交试验确定了饮料配方,实验结果表明,青苹果味苦葫芦降糖饮料最佳配方比例为:苦葫芦500g,纯净水1000mL,食品级香精(青苹果味)1.0mL,木糖醇10g。该饮料色泽深青、澄清透明、口感清爽,是一款适合广大糖尿病人饮用的功能性降糖饮料。
We have developed blood-sugar-controlling functional beverages with the bitter gourd as the main raw material and optimized the processing technology research. Drink formula was determined by the orthogonal test,and the test results show that best formula ratio for hypoglycemic drink of green apple bitter gourd is: bitter gourd 500g, pure water 1000ml,food-grade essence(green apple)1.0mL,xylosic alcohol 10g. The drink is deep green,clear, crisp color,and is suitable for the vast number of diabetes patients.
