在综述苹果花色苷的种类、结构、性质、合成路径及花色苷的药理活性的基础上,对光、温度、矿质营养等外在因素与激素、糖等内在因素以及影响苹果花色苷合成的结构基因与调节基因进行全面的阐述,同时分析苹果花色苷研究领域尚待解决的问题。

The type,structure,character,biosynthetic pathway,and function of apple anthocyanins were summarized. The effect of light,temperature and nutrition and other internal factors involved in anthocyanin transcription factors and structure genes were introduced. The existing problems need to be solved in apple anthocyanins research were analyzed.
