摘要
目的分别检测鲜肉和熟肉制品中4种硝基呋喃类代谢物残留,为获得该类药物残留结果及危害提供科学依据。方法用超高效液相色谱-串联质谱法(UPLC-MS/MS)检测来自集贸市场、超市和专卖店的鲜肉和熟肉中4种硝基呋喃类代谢物的残留量,并用SPSS 17.0统计软件对实验数据进行分析评价。结果鲜肉和熟肉制品中硝基呋喃类代谢物的检出率分别为1.11%和7.73%,差异有统计学意义(P<0.05);来自集贸市场和超市的熟肉制品中硝基呋喃类代谢物的检出率(9.80%和7.14%)显著高于鲜肉(1.43%和0.80%);专卖店中两类样品检测结果差异无统计学意义(P>0.05)。结论鲜肉和熟肉制品中均存在硝基呋喃类药物违法滥用现象,熟肉制品中硝基呋喃类药物违法滥用情况比鲜肉样品更为严重,建议相关部门加大对肉类及其制品中硝基呋喃类药物违法滥用情况的监管和查处。
Objective In order to provide scientific bases for obtaining the residue result and the hazard research of nitrofuran metabolites,the residues of four nitrofuran metabolites in fresh meat and cooked meat products were detected. Methods The content of four nitrofuran metabolites residues in fresh meat and cooked meat products coming from pedlars' markets,supermarkets and exclusive shops were determined by UPLC- MS / MS,and the obtained data was analyzed and assessed by the statistical software SPSS 17. 0. Results The detection rates of the nitrofuran metabolites residues in fresh meat and cooked meat products were respectively 1. 11% and 7. 73%,and the difference was statistically significant( P〈0. 05). The determined rate of the nitrofuran metabolites residues in cooked meat products( 9. 80% and 7. 14%) from the pedlars' markets and supermarkets was significantly higher than that in fresh meat( 1. 43% and 0. 80%),and there was no statistical significance on the difference between the detection results of fresh meat and cooked meat products from exclusive shops( P〈0. 05). Conclusion There is illegal use of nitrofuran drugs in fresh meat and cooked meat products,while the situation in cooked meat products is more serious than that in fresh meat. The related departments are advised to assign special supervision and investigation for the illegal use of nitrofuran drugs in fresh meat and cooked meat products.
