驻京部队餐饮单位餐饮具消毒效果监测 被引量:1

Monitoring report of catering unit tableware disinfection effect in Beijing

摘要 目的了解部队餐饮单位餐饮具消毒质量状况。方法通过现场检查和问卷调查的方法,对驻京部队餐饮单位餐饮具消毒效果进行监测。结果共抽检78个餐饮单位餐饮具613件,消毒效果平均合格率为93.15%。部队医院营养食堂抽检的餐饮具全部合格,士兵食堂和部队幼儿园食堂餐饮具消毒效果较差。不同消毒方式比较,热力消毒及其与化学消毒联合应用消毒合格率均在93%以上,洗碗机消毒合格率仅为60%。结论驻京部队餐饮服务单位餐饮具消毒整体合格率较高,热力消毒效果比较可靠。 Objective To know the tableware hygiene status of the military catering units. Methods Filed investigation and questionnaire survey were used to monitor the disinfection effect of public tableware of military catering units. Results 613 samples from 78 catering units were tested by the national standard method, the overall pass rate was 93.15%. Sam- ples from the military hospital nutrition canteens were all qualified, and the pass rate of samples from soldier canteens and military kindergarten canteens were low. The pass rate of samples from infrared heat disinfection eabinet were more than 93%, and from dish - washing machine were 60%. Conclusion The hygiene status of military catering units'tableware in Beijing is good, and infrared heat disinfection was effective and reliable.
