大豆油精准适度加工关键新技术开发与示范 被引量:11

摘要 以"多出油、出好油"为目标,自主研发大豆油精准适度加工新工艺,开发出了大豆原料质量检测控制、大豆去皮-瞬时高压湿热酶钝化、双酶脱胶/超级脱胶-无水洗长混脱酸耦合、低活性脱色剂两步脱色、低温短时两级捕集回流脱臭,并进行有机集成,建成6 000 t/d大豆的精准适度加工生产线。生产实践表明,与传统工艺相比,新工艺的精炼率提高1.5%以上,吨溶耗降低7.7%,吨汽耗降低14%,吨电耗降低5%,脱色剂用量减少38%,软水消耗降低73%,反式脂肪酸含量小于0.3%,内源性VE和甾醇保留率大于90%,无需添加抗氧化剂,产品符合国家一级大豆油标准。 With "producing more and good oils" as aim, the novel and key technology of accurate and moderate processing of soybean oil was developed independently, including quality detection and control of soybean, soybean shelling - enzymatic inactivation by dienzyme degumming/super degumming coupled with long instantaneous high pressure and hot- humid, - time deacidification without water washing, two- step bleaching using low activity decolorant, and low -temperature and short -time deodorization with two - stage trapping reflux. By the organic integration of these key technoloa, ies. a 6 000 t/d soybean production line was established for accurate and moderate processing. Production practice results showed that compared with traditional processing, the refining yield of the novel technology increased by above 1.5 %, the consumptions of solvent, steam and electricity per ton reduced by 7.7%, 14% and 5% respectively,additionally,the dosages of decolorant and water decreased by 38% and 73% respectively, and the content of trans fatty acids was below O. 3% ,whereas more than 90% of VE and phytosterol were preserved without the addition of antioxidants, and the product met the national standard of first - grade soybean oil.
