摘要
研究了茶叶籽油在氧化过程中紫外可见吸收光谱的变化。结果表明:随着贮存温度的升高,在230nm紫外光处茶叶籽油吸光度随贮存时间延长增加的趋势越来越明显,而在270nm处变化不明显,230nm处的吸光度明显高于270nm处的吸光度,由紫外可见光谱特性得出茶叶籽油在230nm处的吸收结构为共轭双键,270nm处的为三键;茶叶籽油随着贮存温度的升高氧化速度加快,茶叶籽油中的不饱和键逐渐被氧化成饱和键,在230、270nm处吸光度逐渐降低。
The change of UV - visible absorption spectra of tea seed oil was studied in the process of oxi- dation. The results showed that with the increase of storage temperature, the absorbency of tea seed oil at 230 nm grew gradually with the prolonging of storage time, while the absorbency change at 270 nm was 270 nm was induced by the triple bond. With the increase of storage temperature, the oxidation speed of tea seed oil went up, and the unsaturated bonds of tea seed oil was gradually oxidized into saturated bonds, so the absorbency at 230 nm and 270 nm decreased gradually.
