食用油脂生产过程中多环芳烃污染物HACCP体系构建探讨

摘要 介绍了HACCP体系以及国内油脂企业应用情况,阐述了油脂生产企业建立对多环芳烃(PAHs)控制的HACCP体系的意义。以油茶籽油生产为例,在探明油茶籽油生产过程中各工序对多环芳烃含量影响的基础上,进行了油茶籽油中多环芳烃的危害分析,确定了关键控制点(CCP),建立了油茶籽油生产过程中多环芳烃控制的HACCP体系,为油脂企业制定HACCP计划提供借鉴。 The HACCP system and its application in domestic oil enterprises, and the significance of HACCP system construction for polycyclic aromatic hydrocarbons (PAHs) control in oil enterprises were introduced. With the production of oil - tea camellia seed oil as example, the impact of production process of oil - tea camellia seed oil on the content of PAHs was studied and the harm of PAHs in oil - tea camel- lia seed oil was analyzed. The critical control points (CCP) was determined and the HACCP system for controUing PAHs in the production of oil - tea camellia seed oil was established, which could provide ref- erences for oil enterprises to establish HACCP plan.
