摘要 该文分别从植物学和商品属性的角度对坚果进行了定义,从植物油行业和食品工业角度出发将坚果定义为成熟时外皮坚硬木质化或具有革质外皮、仁可食用的干果(或种子)。同时介绍国内的核桃、榛子、扁桃和花生等油性坚果的资源分布和产量,并综述国内常见的坚果和坚果油加工的形式及研究进展,以期为坚果食品的开发和研究提供参考。 In this paper,nuts were defined from the biological perspective and its commodity properties. They were defined as edible dried fruits or seeds with rough covering and lignification or leathery rind according to vegetable oil industry and food industry. This paper introduced the distribution and production of nuts such as walnut,hazelnut,almond and peanut,and it summarized the advances in the research about the form of nut processing as well as nut oil processing so as to provide a reference for the development and research of nuts.
