顶空固相微萃取-气质联用法分析衡水老白干酒风味物质 被引量:9

摘要 采用顶空-固相微萃取(HS-SPME)与气质联用(GC-MS)相结合对衡水老白干酒中的风味物质进行了初步分析,比较了4种不同涂层纤维的萃取头对衡水老白干酒风味成分的萃取效果和特点。结果表明,共定性衡水老白干酒风味物质101种,50/30μm DVB/CAR/PDMS萃取头适用于老白干酒风味物质的分析,共定性91种主要风味物质,其中酯类47种,醇类15种,醛类8种,酮类7种,酸类4种,呋喃类3种,吡嗪类2种,萜烯类2种,其中大马士酮、里那醇是首次报道。 The flavoring compounds in Hengshui Laobaigan Liquor were analyzed by head space solid-phase micro-extraction (HS-SPME) cou-pled with GC-MS. The extracting effects&characteristics of the extraction heads with four different coated fibers on the flavoring compounds were compared. The results indicated that, 101 flavoring compounds in total were detected in the experiment, 50/30μm DVB/CAR/PDMS ex-traction head was the most suitable one, 91 kinds of main flavoring compounds were identified including 47 esters, 15 alcohols, 8 aldehydes, 7 ketones, 4 acids, 3 furans, 2 pyrazines and 2 terpenes, among them, linalool andβ-damascenone were reported for the first time.
