摘要
[目的]本试验旨在研究中国西门塔尔牛太行类群与和杂F1代牛的育肥、屠宰性状和肉质性能。[方法]试验选择健康无疾病,体重相近的中国西门塔尔牛太行类群与和杂F1代公牛(日本和牛×中国西门塔尔牛太行类群)各60头,在饲养管理相同的条件下,强度育肥5个月,试验结束进行屠宰性能测定和肉质分析。[结果]结果表明:中国西门塔尔牛太行类群试验期间的体尺增长与和杂F1代牛差异不显著(P>0.05)。但日增重和杂F1代牛(1.28kg)比中国西门塔尔牛太行类群(1.07kg)提高19.6%(P<0.05);屠宰率和剪切力和杂F1代牛明显好于中国西门塔尔牛太行类群(P<0.05),其他指标pH值、肉色、眼肌面积、滴水损失、大理石纹和熟肉率均差异不显著(P>0.05),但眼肌面积和大理石纹和杂F1代牛好于中国西门塔尔牛太行类群。[结论]因此,日本和牛杂交改良中国西门塔尔牛太行类群有提高屠宰性能和改善肉品质的潜力,为了更好的开发利用和杂F1代,还需进一步的试验研究。
【Objective】The experiment was aimed to study the fattening traits,slaughter traits and meat quality of the F1 generation cattle(Japanese black cattle×Simmental Taihang taxa)and Chinese Simmental Taihang taxa.【Method】A total of 60 were selected from healthy F1generation(Japanese black cattle×Simmental Taihang taxa)cattle and Chinese Simmental Taihang taxa,respectively,which be fattened for 5 months under the same nutrient and feeding management.The study analyzed the slaughter performance and meat quality in the end of test.【Result】The results showed that the increase of body size had no significantly between the two groups in fattening period(P〉0.05),but the average daily gain of crossbreed cattle(1.28kg)was 19.6% higher than that of Chinese Simmental Taihang taxa(1.07kg)(P〈0.05).The slaughter rate and shear force of crossbreed cattle were higher obviously than that of Chinese Simmental Taihang taxa(P〈0.05).Other indexes including pH value,color,eye muscle area,drip loss,marble and cooked meat rate showed no significant difference(P 〉0.05),but the eye muscle area and marble of F1 generation cattle were better than that of Chinese Simmental Taihang taxa.【Conclusion】Therefore,Japanese black cattle crossbred Chinese Simmental Taihang taxa had the potential of increasing slaughter performance and improving the meat quality.In order to further improve the performance of crossbred cattle,the further experimental research was still needed.
