野生芝麻剑肌肉氨基酸组成及营养价值评定 被引量:1

摘要 目的:为芝麻剑人工配合饲料的研制提供理论依据。方法:采用国标方法测定野生芝麻剑肌肉常规营养成分及氨基酸组成。试验结果:芝麻剑肌肉中粗蛋白(19.47%)含量丰富,粗脂肪(1.15%)含量较低,粗灰分含量为1.80%。肌肉中检出17种氨基酸,其中人体必需氨基酸7种,氨基酸总量为74.00%、必需氨基酸总量30.49%,鲜味氨基酸总量29.23%,必需氨基酸占氨基酸总量(TEAA/TAA)的百分比为41.20%,EAAI为69.28%,必需氨基酸的构成比例基本符合FAO/WHO的标准,表明芝麻剑是一种肌肉蛋白质营养价值较高的优质鱼类。 The nutritional composition and amino acid composition in the muscle of wild Mystus Guttatus are analyzed by applying the national standard method, providing theoretical basis for development of artificial feed. It is found that the contents of crude protein, crude fat, and ash are 19.47%, 1.15 % and 1.80 % in the muscles, respectively. There are 17 kinds of amino acids in muscle, including seven kinds of essential amino acids. The total amount of 17 kinds of amino acids is 74.00% (dry matter), with essential amino acids of 30.49% which accounting for 41.20% of total amino acids, and with the essential amino acid index(EAAI)of 69.28% and with delicious amino acids of 29.23%. The constitutional rate of the essential amino acids is in line with FAO/WHO standard. Mystus Guttatus is one of quality fish with higher protein nutritional value.
