摘要
以石斛兰为原料,提取石斛兰红色素,并对其理化性质及其稳定性进行研究。结果表明石斛兰红色素对Ca2+、Mg2+、K+等表现出很强的稳定性,但对Mn2+、Fe2+、亚硫酸钠和过氧化氢表现不稳定。在p H值<6的酸性条件下,石斛兰的红色素非常稳定,可作为石斛兰花材干燥后不褪色的护色技术,应用于干燥花的生产。
Taking dendrobium as raw material, extraction of dendrobium red pigment, and the physicochemical properties and stability study. Results showed that dendrobium red pigment of Ca 2+, Mg2+, K+ a strong stability, but the Mn 2+, Fe2+, sulfuric acid and hydrogen peroxide performance is not stable. At pH value〈6 under acidic conditions, dendrobium red pigment is very stable, as dendrobium material after drying do not fade the color protection technology and application in the production of dried flowers.
