摘要
采用高效液相色谱法,分别对苦荞在光照和黑暗条件下发芽9 d后的多酚类进行定量检测,采用显著性分析、主成分分析和聚类分析等方法分析二者的差异,以DPPH自由基半数消除率对苦荞芽抗氧化活性进行评价.结果表明:黑暗条件下的槲皮素和山奈酚的含量显著高于光照条件下的含量,咖啡酸含量差异不显著,而绿原酸、对香豆酸、荭草素、异荭草素、阿魏酸、牡荆素和芦丁的含量显著低于光照条件下的含量,光照条件下比黑暗条件下苦荞芽活性显著增高,光照对苦荞芽中多酚类物质及抗氧化活性有重要的影响.
The thesis investigated the effects of light on the polyphenols in buckwheat sprouts obtained on day 9. The polyphenols in buckwheat sprouts grown under light and dark conditions respectively were detected by high-performance liquid chromatography. The differences were analyzed by chemometric approaches including significance analysis, principal component analysis and cluster analysis. The DPPH scavenging rate was used to evaluate the antioxidant activity of buckwheat sprouts. The content of quercetin and kaempferol in buckwheat sprouts under dark conditions was significantly higher than that under light condition, but the difference in coffee acid was not significant. Under light conditions, the sprouts have higher chlomgenic acid, p-coumaric acid, isorientin, orientin, vitexin, ferulic acid, rutin content and more antioxidant activities compared with the ones under dark conditions. The polyphenols content and antioxidant activity in buckwheat sprouts were significantly affected by light.
