摘要
鱼类加工过程中会产生大量的鱼头、鱼骨等下脚料,这些下脚料含有丰富的营养成分,可分类加以利用。本文就鱼头、鱼骨在制作鱼粉、补钙产品、休闲食品、调味料,以及提取明胶、硫酸软骨素和多糖等方面的应用进行了综述。
Fish process refuges,including fish head, fish bone et al., are value for their nutrients, and can be processed into various products.In this study,the applications of fish head and fish bone in processing of fishmeal, calcium supplement, snack food and spices,and in extraction of gelatin, chondroitin sulfate and polysaccharide were summarized.
