摘要 目的不法商贩把地沟油或者一些相对廉价的植物油掺入合格的价值高的植物油中牟取暴利,损害了消费者的健康及利益,因此需要建立一种比较方便快速的检测方法,以适应市场需求。方法采用二维及三维荧光分析方法对芝麻油和菜籽油的掺杂进行鉴别,探索荧光光谱法在食用植物油种类和掺杂鉴别中的可行性。结果通过比较二维相关图谱中的各特征相关峰,能够实现油样种类的判别。结论本实验为食用植物油掺杂鉴别提供一种新方法。 Objective Unscrupulous traders used the cooking oil or some cheap oil mixed in qualified high- value vegetable oil in order to obtain more profiteering,this action damaged the health and profit of consumers. So we need to establish a more convenient and rapid detection methods to adapt to the market demand. Methods Using two- dimensional and three- dimensional fluorescence analysis method to identify doped sesame oil,this study was to assess the feasibility of fluorescence spectroscopy in identification of adulterated edible oil. Results By comparing the two- dimensional correlation spectra characteristic of each correlation peak,we can distinguish the oil samples. Conclusion This study can provide a new method in the identification of edible vegetable oil.
